Well, if your jar were actually canned and sealed it should stay good practically forever. However, you punch air holes in a mycelium jar for air exchange, so contams WILL get into your substrate. Might take days, might take weeks, but the vermiculite seal is just not 100% effective.

You shouldn't wait at all to inoculate jars - ideally it ought to be done as soon as that have cooled to room temperature. By waiting you give anything that might be present a better foothold on the substrate. Believe it or not, the mycelium is capable of defending itself and taking out other organisms that are in competition with it.

Knock up your jars immediately!

Yeah you can.....but you better make sure the jars are sealed.....or have Alum foil around the lids.
