I asked Allah whether seedless watermelons could be Halal, given that in the Old Testament of the Bible there is the clear instruction to save your finest, healthiest grain to plant and you use the inferior ones to make bread, and seedless watermelons are produced by crossing watermelons of non-matching chromosome numbers, producing a barren offspring.

Allah advised that it is as much against the spirit of the Qur’an as against that of the Old Testament, that He does not prefer this, but that I am free to eat them, and to definitely study the Qur’an in more detail. He did not classify it as Haram but, not of His preference, and added that these are difficult times, and it not just robs the individual plant of its offspring, but also the people of the opportunity to collect and plant the fertile seeds of a truly healthy plant, successful reproduction being a sign of good health.

Whether there in Islam are clear rulings regarding the Halal status of seedless fruits He left up to my study of Islam, to encourage more of this study, but He did not shut me down from eating it.

Good question. So much of the organic world has been shaped by human activity, intentional and otherwise, that it becomes a matter of discernment on a case by case basis whether something is upsetting the balance of nature by virtue of its "artificiality."

I'd want to know more about the whole process that went into the growing of that seedless watermelon. I.e., what's it like on the farm itself. Are the people there happy? What kind of energy is getting into the fruit.

I watched a video recently about how they are saving the ash tree in northeastern U.S. by introducing this tiny wasp from Siberia, that targets the emerald ash borer beetles in both adult and larvae stage. Seems to be working very well. A lot of care consideration and controlled experiments went into the process before the government agencies gave the go-ahead for it. A cool case of human intervention having a positive effect on the local ecology.
