My boss made me this insane breakfast sandwich after last night. He was gifted some duck eggs and uses our bacon. It was so rich and fluffy. It was like taking bites out of a savory cloud. He really took the time to scramble those duck eggs perfectly too.

Ahh, I should added some tuna to the beans. Fish would have been better, but I thawed the beans, had the salad in the fridge and just opened a gallon of pitted green olives.

I love green olives, went to a restaurant wholesale supplier that's open to the public. I usually buy little jars at the store, it's summer I need the electrolytes.

It's a succulent, the one with the shiny smaller spatulate leaves. You probably haven't had anything like it. The one in the sandwich is bland, it's usually sour, this was growing in rich loam and grew very quickly. Not sure why it wasn't sour. The sandwich though even without the sour was tasty. It came up next to a catnip plant, there was room for it so I let it grow.

I've really come to appreciate purslane. We would actually leave it alone and not target it when weeding field beds. Although it did leech some water from the crops it wasn't aggressive and physically problematic like bindweed. The trade off is that once it grew out and was thick enough it would shield the topsoil form the sun and prevent evaporation for a little longer.

It's kinda pretty too.
