Lol sorry everyone damn Sprint turned off my phone but I just got off of the phone with my dad. He didn't say he had a recipe because he knows it like the back of the hand but he described it to me.
5lb Bad of Potatoes 6-8 Eggs Cluster of Celery 2 Clusters Green Onion Scallions Mayonnaise Mustard Jar of Sweet Pickles Grinder of Black Peppercorns
Add the potatoes and the eggs in a very large pot and let them boil. Poke the potatoes often to where the fork goes in but don't cook them as you would to make mashed potatoes.
Once they are done take the pot off of the oven and let cold water run in/over the pot to cool the eggs and taters.
While this is being cooled you can cut up the celery, scallions, and the sweet pickles. It is all judgment on how much of everything you would like in the recipe. He ususally uses about 3-5 sticks of celery for a 5 lb bag of potatoes, 2 clusters of scallions, and how ever much sweet pickles you would like, he will usually use about 5-8 pickles.
Once the potatoes and eggs are cooled peel them into the trash. Use a knife, not a potato peeler to get the skins off of the potatoes. Cut them up into cubes and chop the eggs up. You can take out the center yolk and save it for the mayonnaise and mustard.
Put the potatoes and eggs in a large mixing bowl/or Tupperware and start to add the ingredients. For a 5 lb bad you can use around 12oz +/- of mayo. While adding everything keep stirring and looking for "creaminess". Add mustard to your liking and keep stirring in the celery and the sweet pickles and the scallions. If not creamy enough add more mayo and a little more mustard. Once mixed and finished use black peppercorn pepper and a little salt if you would like. It is best served after being able to sit over night in the fridge but mmmmmm hmmmmmmmmmmmmmmm! I will never buy store bought potato salad again!
