Ok - who has a fabulous recipe for cheesecake? I have a yummy one for toblerone cheesecake which I will post when I dig it out - but I'd like some new recipes for cheesecakes - especially if anyone has one for strawberry cheesecake?

Check it out, they have tons of recipes, all with ratings and reviews.

Just remember, when you cook a cheesecake in the oven, a water bath will help the surface fom cracking. If it cracks, oh well, it's just an excuse to slather whipped cream over the top of it.

At least once in your life eat at a Cheesecake Factory restaurant. If there isn't one near you order a cheesecake from their website. The white chocolate raspberry swirl cheesecake is incredible.

Here's a really good recipie for a plain 3-layer cheesecake.
I've provided unit conversions for those unfortunate to live on the outskirts of civilization.


Crust:
1/4 lb. graham crackers (.11 kilo)
6T melted butter (90 mL)
2T sugar (15 mL)
roll graham crackers fine, mix ingredients and line 9-10" spring form pan

Middle layer:
24 oz. cream cheese (.68 kilo)
5 eggs (5)
1c sugar (240 mL or about 200 g)
1/4t salt (1 mL)
1t vanilla extract (5 mL)

let cream cheese reach room temp.
Using an electric mixer of food processor, beat it (cream cheese) until smooth
Add eggs, one at a time,
dribble sugar in as you beat, scaping sides often
add salt and flavoring and beat until smooth, thick, and lemon colored
pour into a pan (same one as above) and bake at 325F 45 mins or until set
remove from oven and cool on cake rack for 20 min or so.

top layer:
1 pt sour cream (475 mL)
3T sugar (45 mL)
1/2t vanilla (2 mL)
mix well and pour over cake
return cake to 325F oven and bake about 10 min. cream should set but not brown.
cool on cake rack, then chill thouroughly


alternately, substitute 3/4t almond extract for vanilla extract and shave unsweetened chocolate on top after cooling.

here is a recipe for ya grizz better than cheesecake shop cheese cakes

Ingredients
Base
125g biscuits, crushed
1/4 cup melted butter

Filling
2 Tablespoons of gelatine
1/2 cup hot water
1 440g tin boysenberries

250 g white chocolate

500 g cream cheese

1/2 cup natural yoghurt

1/2 cup caster sugar

Method

To make the base mix together crushed biscuits and butter and press in to pan with removable base, refrigerate utnil firm.



Sprinkle gelatine over hot water dissolve in microwave, stir half of the gelatine mix into the boysenberries, if you think there is too much liquid in the boysenberries get rid of some.

Melt chocolate gently in the microwave. Put the cream cheese, yoghurt & sugar into a bowl, beat till smooth. Beat in the melted chocolate with the remaining gelatine mix till smooth. Pour into the base.

Pour the boysenberry mix over and swirl into the cheesecake. You don?t want to mix it in totally you want it to have pockets of boysenberry. Put into fridge for 2 hours. Eat and enjoy

you can subsitute the boysenberries for any topping you like.
