Mexican lasagna, tasted good, but instead of boiling the masa herina an making sheets of cornmeal. I made tamale filling masa, butter and water heated to make a dough and rolled out to put in between the layers filling.


The tamale filling layer could have cooked longer.

From raw chicken without seeds, with seeds, and after baking/broiling.

Now I just need to wait 10 minutes for them to cool down enough for me to touch it and then eat one.

I had a 2 smash burgers, one bison and one pork, with onions jalapenos and a nice slice of some superb beefsteak tomatoes. Also had a simple but satisfying salad.

i made my own tortillas last time i had tacos, i still have a lot of the corn masa left, so i might break my low carb diet to make some again sometime, but it takes a while, i think if i recall correctly it took me 40 minutes to make 12 tortillas

Chicken drum sticks in the oven with this marinade:

3 tbsp ginger garlic paste
2 tbsp ev sesame oil
1tbsp ev olive oil
2tbsp balsamic vinegar
1tsp salt
1tsp pepper
1/2 tsp kashmiri red pepper
1tsp coriander pdr
3tsp cumin pdr
A couple pinch fulls of rosemary needles
1 tsp ceylon cinnamon pdr
1/2 tsp clove pdr
3/4 tsp sindhi biryani masala (mdh brand)

Baked in the oven 375° f or 45 minutes covered.
I took it out at this point and sprinkled a light layer of sugar on each piece of chicken and then put it back in the oven on broil for 10 minutes to create a nice caramel texture and color on the top.

I made ribs for dinner



I removed the membrane, added a rub made of

Salt
White pepper
Smoked prapika
Chilli powder
Garlic powder

Wrapped in foil and baked at 275° for 3 hours, then I removed the foil and baked on a rack at 475° for 15 minutes to dry them up

I ate the whole bigger rack, I'm going.to eat the smaller rack for breakfast tomorrow

The rack I ate was 519g cooked with the bones

id like to make a more eastern rub next time using like garam masala or nutmeg and cumin or something

I too enjoy ribs without bbq sauce, just a rub. BBQ sauce can be too sickeningly sweet and overpowering, whereas the mild savoury option with just a rub, goes hard.

i actually love slathered ribs, but im avoiding sugar and fake foods, the rub was good though, it reminded me of those bbq rotisserie chickens the grocery store has

If you add lemon juice or pineapple juice to your ribs it will make them extra soft and fall off the bone.
