TBH, I haven't noticed any difference. For me, there are lots of variables, in addition to fresh or dried starting material. I would be very interesting to find out though! You'd have to start w/clones, same extraction %, overall reduction and recovery values, etc.

Maybe just testing a fresh vs. dried mush would be a worthwhile start?

Had anyone tried fumaric acid instead of citric? I much prefer it in some other contexts and it seems like it might work well here. Also somewhat interesting is that porcini mushrooms are one of the main sources for fumaric acid, so maybe there's some synergy there.

I have not, I'd imagine it'd work pretty well? Maybe try a small batch extraction first to test it? Please feel free to share your results here afterwards.

Man this is what I've been looking for.  I'm planning on just doing a single dose tea to start.  Figuring 5g cubensis, about how much citric acid should I use, like 10%?

Not sure it matters much but I just checked and all I have is wine acid blend (citric, malic and tartaric acids)

10% might be a little high probably closer to 2%, maybe less?  You can use too much and make it inedible. I haven't used it but I'd guess your wine blend wouldn't be a problem,  maybe even a benefit?

I always go with 2% of fresh weight with citric acid. If I'm using dried material, somewhere between 1/8 and 1/4tsp works fine.

How have I never commented on this one?

Awesome work, Yoshi. I just started playing with adding acid back into the tea stage and doing some potency testing. Just QTests so far. Looking forward to some gummy trials.

If I am reading this thread correctly, the initial citric acid should be around 2% of fresh weight? How about potassium sorbate for anyone who has used it?

Potassium sorbate should be calculated by weight of the final product. For candy, it is recommended to use 0.1% of pure potassium sorbate by weight (1g per 1000g of final product).

For example, if your ingredients combined equal 100g - not including the weight of the mushroom prior to extraction - you would only need 0.1g of granular potassium sorbate.

I always incorporate the potassium sorbate with relatively precise calculations and I make a water dilution. Keep in mind, potassium sorbate is considered toxic to humans, but deemed acceptable at levels up to 0.2% for items like bottled juice concentrate.

Anyone else have issues with sediment? I left the liquid post simmer x2 in the fridge all night, at least 12 hours. Sediment was clearly in there bit had not settled at all.

Another question, how much are you all reducing to? I guess it depends on how much liquid you start off with. Is there a viscosity or thickness you are going for?

Thanks for the great info about potassium sorbate.

Hotbox, unfortunately, unless you are using a fine filter, with a Buchner funnel, you are not going to get all/most of the sediment out.

Try to decant as much of the clear liquid as you can then work on the remainder, separately.

One possibility,  I have 3 clean oil funnels that I stuff with wads of Polyfil down into. Depending how firmly you pack the Polyfil into the lower part of the funnels, changes the filtering. Loose Polyfil towards the top of the wad catches a lot of fine particulate and slime. I put the funnels in a bucket and start pouring the solution through them. As the filters start to clog, pop the Polyfil out with a chopstick, rinse the sediment off and pop it back into the funnel for more filtering. This works with cacti too.

As for how far to reduce, that depends on what you plan to do with it and how strong you'd like it. When I make gummies, I try to work in increments of 1/2C of reduced liquid. ReverendMyc does a thing that I'm going to copy for rewriting the making drops. He uses a dehydrator to reduce the liquid all the way.
