You can keep the mushrooms in your dessicant chamber as long as you like. A know a dude that stores all of his in a large dessicant chamber.
The freezer is ideal, but there's no need to go through all of that bullshit trouble involving freon or co2 and whatnot. As long as the mushrooms are cracker dry, they can be placed in the freezer and stored for an indefinite amount of time. Some have been known to store for an entire presidential term with no noticable loss in potency.

If your mushrooms have ever sporulated, and you picked them while wearing one of your favorite t-shirts, you've already undoubtedly done this. Actually, everyone who grows mushrooms has spread spores. Your car seat is a hot-spot for all kinds of mold spores.

Insomnia has it right. I was trying to dry my first crop in a container with Damp Rid. After four days the shrooms were only partially dry. The Damp Rid had hardened over and didn't seem to be doing any work. After 24 hours in front of a fan the shrooms were reasonably dry; then I placed them back in the container with the Damp Rid. I checked back in two days and they were "cracker dry".
So the lesson I learned was not to depend on a chemical dessicant to get the ball rolling.
