The way I love to cook chanterelles is simply to fry them in butter/olive oil with a couple of grinds of black pepper...mmmm...

Other ways I like them is cooked with shiitakes and oyster mushrooms, in omlettes and on toast.

Mushroom pasta is amazing too. Boil and drain pasta, fry mushrooms in oil with parsley and garlic, prepare a simple cream sauce with 1 part cream, 1 part grated cheese, egg, and a touch of water if it's too dry, mix all together and cook for another couple of minutes. Garnish with parmesan and black pepper.


Chanterelle season is about now in Scotland. We recently had a lot of rain. Where are you from?

I'm in kansas. I found these guys right after rainfall but didn't know what they were, and didn't have my field guide with me. now they're all dried up and it's hard to tell, but i'm pretty sure they're either chanterelles or lobster mushrooms. They smell damn good whatever they are. they were growing next to some russulas, in a grassy area under some oaks next to a dirt path. the habitat is the same as i've heard chanterelles are supposed to live in, but i read that lobster mushrooms parasitize russulas often, and they look similar so I'll have to wait till it rains again to be able to tell for sure.

I LOVE chanterelles. I have literally thousands of them on my land in eastern MO. I really like to soak them in Italian dressing (the oil kind, not the creamy) and then put them on skewers to roast on a BBQ. Really good with steak and other grilled veggies...enjoy!
