Should I hold off my grow?

I'm growing for the first time, I just pressure cooked my jars last night and was planning to inoculate today. However I'm going on vacation for a week in the middle of August, and I got to thinking that would probably be about the time my jars would need to go into the SGFC. Can I leave my fully colonized jars resting longer than normal if everything goes well or would that be a problem?

Yes you can make them stall but its not good, Just put them in the fridge and that will slow down the growth.

You should be good to just go about it as normal, I can't imagine your cakes being 100% before mid august..  It is important to let the cakes sit for a week (consolidation phase) after 100% colonization anyway so your vacay shouldn't disrupt much.
