Karo Question
    #2565907 -

Howcome if bacteria and mold love sugars so much i can leave an open bottle of honey out or karo and it never gets mold. And there are no preservatives listed?.

I don't know much about anything, but i'd say its about concentrations.

I mean, if you mixed up some of that karo with some water and left it out, I bet you'd get all sorts of nasties growing on it in no time.

I assume bacteria and mold also have specific growing parameters, maybe 100% pure karo has too little h20 for it so propertly sustain anything.

If you left the karo out long enough, you'd probably get stuff growing on it anyway though, humidity and open air make pretty much any organic matter bacteria fodder over a long enough time frame.

There are preservatives and crap that must boil off. and the concentration has allot to do with it also.

Honey has natural antiobiotic agents in it:
"Honey may be antimicrobial because of enzymes secreted by the bees that make it; alternatively, its activity could be due to its acidity or to chemicals from the original plant nectar"

Honey is the only natural food that will never spoil.

I'm not sure about the science behind it. However, it is common knowledge.

The antibiotic nature of honey is questionable. See any thread regarding the use of a honey jar to preserve shrooms and you'll see some swear by it, some discount it out of hand.

To answer the original question, yes concentration has a lot to do with it, if you added more water then you'd see rapid bacterial contamination. If it's been left for a year, well, either it's an extremely rare case, it contains preservatives that aren't listed or you live on the moon. Rest assured that properly prepared karo water for mycelium cultures contaminates exceedingly quickly and easily.
