commercial oysters
    #2461249 -

I'm curious if anyone sells oyster mushrooms or morels. I'm interested in seeing how the wholesale price stacks up here and there. Just a basis for comparison.

The USDA prints daily wholesale market reports: http://www.ams.usda.gov/fv/mncs/fvdaily.htm

Wholesale is at about five bucks a pound. But the stores then mark them so they make at least a houndred percent.

Prices are wholesale. The wholesale price near me is about $4.60, but I can only get about $3.50-4 a lb.

Creekfarmer,
Have you checked out http://www.mushroomcouncil.org/?

For specialty and exotic mushrooms, target high sales produce departments in high income areas. You'll get the fairest price there. Educated high income consumers are more likely to buy specialty shrooms.

Rediculous! I think the further from the source you are, the better the price you can ask. Get what the market will bear. I think it is fair to ask 60% of retail. Retail is a smidge over $16 here in the upstate of South Carolina. If you walk into a restaurant and speak to the chef, and you have freshies, you are in the drivers seat. Typically, they get a product that looks like shit, gives you painful gas, and doesn't taste all that good. If you have a fresh, good looking product, don't hesitate to ask for a premium. Sell your product. I have been getting $8 a pound for growroom mushrooms. I sell outdoor grown oysters for $9.25 a pound because they are more flavorful and they keep longer. Also, pick the entire bouquet. That way you get paid for the stem and the whatnot. They keep longer in the bouquet form. Go out and get ya some money!

I was surprised how many restaurants use oysters. I just started going into the upper-end type restaurants and asked to speak to the chef. (Make sure it is in the afternoon before their rush starts.) A lot of chefs will buy my oysters, then plan specials around them. Just walk in with your best looking bouquet.

Do you have any sort of special sales pitch?

Think about how close you are to the massive PA farms that pump out tens of thousands of lbs of mushrooms a month. That is why your prices are so low.

Oysters, especially straw grown mushrooms start to decay very quickly. Their shelf longevity can be increased by lowering humidity before harvest, but nevertheless after a week from harvest you will have an product that you cannot sell.

Here in WI, I have never seen a decent oyster package on the shelf. They are always shit.

No pitch. A nice bouquet will sell your mushrooms for you. I have never sold anything so easy. I found it's best to do cold sales with a box of mushrooms that I picked that morning. I put my show bouquet on top and just walk into the kitchen with the box held low so everyone can see in it. Now that I have established the relationships, I can just call and send my girlfriend with the mushies. I just let her keep the loot. She works in town and I work on the mountain.

The PA oysters make my product easy to sell.

I am super close to the Pa farms
But thats why we take care to take care of our products. By the time they get to nj they are pinning on the caps and will give you an upset stomach. But still they effect the overall price for us. But also make it easy for us to sell at the same time. We sell to large super stores so they buy at a cheaper price but they will take em all at once. I am now looking for smaller resturants that will buy them at a better price. And get a delivery rout going.
Creek thats the same relationship I have with my boss well he has the land and equipment I do all the work. 60 sawdust bags ever 2 days.
