some peoples cookers have an adjustable psi thingy. ya know. mine is from walmart with a little weighted bell on top. it said i think 12 psi in the book but who knows. anyway @ 12psi i go for 1 solid hr or give it an extra 15 mins for good measure. i guess the higher the psi the shorter but 1 hour is sufficent for pf. diffrent times for diffrent substrates.

Shit, did 30 mins 15psi, PF jars. Day 7, good quarter sized mycelium splotches.

It has a lot to do with altitude as well. I think they mention this in preserving manuals. 45 mins or 30 mins may be good for some but others may need a full hour 'cause they are pretty high above sea level. My friend does them at 15 psi for an hour just to be on the safe side, he's pretty high up.-snarf

im in fl at sea level. and i do belive a half an hr is good. but i just turn on for and hr and turn off and play with in the mornin

My buddy does an hour or more at 15psi and has not had one contamed jar....yet.

Thanks for the responses. I guess I should have mentioned that I did sterilize them at 15psi. I also live in Florida, so altitude isn't a problem. Would there be any negatives for leaving them in for an hour? I now have two of eight jars with contam. I'm just hoping the other 6 will make it.

There will be no problem leaving them in the cooker that long. BUT, it is very important not to release ANY pressure from the cooker. If you do this will cause the water in your substrate to boil out. When the pressure cooker is cool, then take the weight off, not before. The pressure is what allows you to get much greater temps. without the water boiling out. This is why pressure cooking is so highly recommended for sterilizing, The greater temps. assure complete sterilization.[This message has been edited by hitterg (edited June 24, 2000).]
