pressure cooker help

I recent aqquired a pressure cooker so i decided to try my hand at growing again. Now i have a few questions about this thing cuz it has no manual and is realy old. my concern is it doesnt have a guage on it to set or tell me what psi its at. is there like a time that it takes or something? its pretty small it fits 4 half pint jars in it. and it had that little peice on the lid with the indent in it that almost seems like its where other pressure cookers hold that guage thingy. it is an ekco pressure cooker. model 215780
wooden top knob and a little wooden slidey button thing to lock it in place. if anyone can help me id realy appreciate it.

SoulJa, I wish I could help, but I'm in the same boat ur in. My friend had an old pressure cooker with no gauge. There's a rubber fitting plugging up where it looks like a gauge should go.

Should we by an accessory gauge to stick in there? Can we just listen to the sound and tell the approx. PSI?

It should have a small "pipe" on the lid of the cooker and there should be a heavy rocker that sits loosley on top of it.

Put water in the cooker. Before putting on the lid, look through the hole in the "pipe" to make sure that nothing is obstructing it. Now put the lid on the cooker and make sure it fits firmly. Put the rocker on the "pipe". Heat the cooker until the rocker begins to do it's thing: wobble or rock. You'll know it's right because you'll hear the steam going "shhh, shhh, shhhh, shhhhhhhhh" slowly building up tempo. Now turn your heat down to about a quarter of the way until it only goes "pshhhhh" about once a minute or so. Now it is time to start counting the minutes for the amount of time you need to sterilize.

This is a common mistake that results in poor sterilization. Do not put the rocker on the pipe until a good head of steam builds up inside the cooker. Once a nice steady stream of hot gas is escaping from the pipe, wait another few minutes, then put the rocker on the pipe. Turn the heat down slowly until the rocker only rocks once or twice a minute. Do not use cold water to quickly cool the cooker when you are done.

What are you talking about Seuss ?
What's the need of a pressure cooker if you don't put the rocker on ? I really don't understand your method, and why do you have a better sterilization ?

heheh, I beg to differ. A n00b could easily boil too much steam from the cooker and end up with quite the mess. I advise them to stick with what I've mentioned here as it is basically the same description as in every pressure cooker manual. Try practicing with the cooker first with just water in it.

Another thing, I've never seen "poor sterilization" from doing it this way....anyone else want to back me up on this one?

Hey Azurepower...if you can scan the operation part of that manual I sent you, could you please post it here or type it out?

i just slowly bring to a boil-get it going good-put lid on cooker-then add the wobble thingy-then i cut down until i see it hittin a few puffs of steam a minute(reminds me of smoking opium for some reason)then leave for 45 min-
i have done over 60 jars this way-
never lost 1 to a contam-
(knock on wood)
i recently made a new incobater with solar mylar(i think thats what its called)and a rubbermaid-it will fit in my closet and hold 75 jars-
mylar really works well to insulate- :smile:

The theory behind it is that you should have any air that is in the pressure cooker get driven out of the cooker (as quick as possible), since the condensating steam has a much better heat transfer coefficient than hot air.

I for myself never bother to do this, I always start with the rocker on, like Nighted described it. And it obviously works.

An easy test to see if your pressure cooker reaches a high temperature is to let a drop of water fall on the lid of the pressure cooker, once under pressure. The drop should evaporate very fast under boiling. Then the pressure cooker temperature is higher than the athmospheric boiling point of water.

If this doesn?t happen, then something is not in order.....

SoulJah, listen, i have lost more than 150 (!!) jars, due to false use of my pressure cooker....and from what i know, this is a shroom-record here...lol..The mistake i did, was that, i started counting the sterilization time(since my pc hasnt got a gauge either) ,as soon as the water started boiling,and i "locked" the lid...Thank god, i met Anno, who teached me how to tell, when the pressure inside the pressure cooker is right ,to start the countdown...
You must simply let a drop of water fall on the p.c.'s lid, and watch it boil instantly! Only after this happens, the pressure is right to start the sterilization time countdown.....trust me...i'm Sterile! LOL

you are supposed to wait until steam is rising out of the "pipe" before putting the rocker on, then waiting for the rocker to "do its thing"

Thank you for the many replies! But heres the deal. my cooker doesnt have a rocker or a pipe to put it on. it has a little cap that screws onto the lid and has a sping powered switch so to speak. if i push it up it open and down it closes. the cap also has 4 little holes in it my guess is for steam to get out. any ideas about that?

WOW! thank you luvdemshrooms! 

so anyways im testing it on one jar. i waited till when i dropped water on the lid it evaporated and since then its been in there 1 hour and 13 minutes. i can still hear water boiling in there so i know im not burning my jar.

The proper way as the book says:(Presto instuction booklet)

Cooking time begins when the pressure regulator begins to rock gently. Gradually lower the heat as necessary to maintain a slow, steady rocking motion and cook for the length of time directed. If the pressure regulator is allowed to rock vigerously, excess steam will escape, meaning fast evaporation of substrates H20 level!

I wounder if tyvek filters are better on jars because water wont pass through the filters just air? Hmm...any help on this one...... Anno?

Tyvek filters are permeable for gases, including steam.(gaseous water)
