yes, most likely vermiculite. Is there a sour odor emanating from the jars?

You said thats a....a what?....a casing!?
I hope you meant a cake. If that's a casing, you have some serious overlay issues. Not to mention over watering or humidification.
But I think you meant a cake. If so, all looks well to me. It's not been birthed (still in jar) correct? You might want to invert the jar so some of that moisture will drain into the verm layer. Those spots could just be water damage.
I still think they look like invitro pins. I hear this is relatively common with the cams. Could be verm I guess.
