Using AA921 1st Time Tonight - Need Help!

Gonna use my AA for the first time tonight. I have no experience with this type of PC (and have only used any other once, last night, heh) so I had a few questions.

1. I put a small amount of olive oil on a paper towel and wiped around the area I highlighted. Is this the right spot I was supposed to do that on?



The trivets provided are a bit lower than an inch when stacked on top of one another. I don't want to use jar rings because then I can't use those jars right now.

2. Can I stuff like 4 crumpled aluminum foil squares/balls in between the 2 trivets to elevate the top one so my jars are higher up? As long as it's sturdy, this should be totally fine, correct?

3. Is this timeline correct?

Put my water in and load my pressure cooker, place cooker on high element with the weight off for 5 minutes so steam can escape. After 5 minutes, put the weight on and wait til I hear the weight rattling (this means it's at 15 PSI). Lower the heat to a setting where 15 PSI is constant, but the weight only wiggles/moves a handful of times per minute. I then start my 90 minute count.

When the 90 minutes is up, turn the stove off and let it sit overnight til everything is cold.

4. The manual says to remove the weight as soon as it reaches 0 PSI or else a vacuum can form. Do I just have to go check on it every while after I turn off the heat to see when it's at 0 PSI?

I just throw the racks in there. No aluminum foil spacers.
The weight has 5 10 and 15 on it. After the 5 to 10 min without the weight, make sure you set it on the 15.
Put more water in than what they recommend. I think they say a few inches. It will go dry in 90 min with that. I put in enough water to where the jars just start to slightly float.
After your 90 min, shut it off and go to bed. Take the weight off when you take the jars out. 
And um..good job on spending your money wisely on a solid product. Enjoy.

Thanks to both. I figure spending money on quality products immediately will save me trouble down the line.

When you say floating, you mean on the rack(s) with the jars actually touching the water?

I have 3" of water in there and I already built my little hut with 4 foil rectangles standing up. I should do more water, azur?

I'm worried the pieces of foil will fall over when the water boils and knock over the jars, but foil is sturdy in PC's right?

i don't know what azure mean by jars "slightly floating" but he knows what he is doing.  i think he means its ok if ur jars touch the water.
for 7-10 qt jars, the water line goes up the jars for me maybe 1/2 inch.  i never really measure the water TBH, there is a stain line on the walls of the PC i use from having it so long.
more water does not equal better.  it just means it will take longer for ur PC to get up to pressure (more water=more time needed to get the water boiling=more time total for PC chamber to be filled with steam from boiling water).
the foil should not fall off, and if it does, i doubt the weight of the foil could topple over a glass jar filled with BRF/grain or whatever u have in there.
i vent steam without the weight until i see PSI increase to 1-2, then put weight on, to make sure the PC is filled with STEAM pressure, not AIR pressure.

Sorry for the confusion. I didn't mean the foil on the jars. I have 4 folded pieces of foil in rectangular shapes in between the trivets. With the trivets by themselves, the jars only elevate maybe .5" from the water, which is far too low. I put little foil stands in between so they're higher up.

My setup is like this. Now I'm nervous because I don't want to boil it dry and I only have like 3-4" water in there.

oh ok.  so w/o the foil below the trivet, ur jars are still not touching water, but the recommended amount of water (as per manual) for a 1 hour cycle is in there?  I think you are fine w/o the foil then.  even if u still use the foil under the trivet, the weight of the jars will prevent anything u might be worrying about.
edit: 3-4" of water?!?!  i use less than that for grain bags dude!!  ur 100% fine!

Ok, thanks. It's reading 14PSI and the weight is jiggling in a circle and spitting out steam maybe once every 13-15 seconds. This is fine?

It's maintained 14PSI for like 5 minutes on 3. I did a 60 second count and there were 5 bursts of weight jiggling, lasting maybe 3 seconds at the most, but once every while a few are like 5-6 seconds.

Is this exactly what I want?



Sorry for being so anal, but I want to get this right so I can do it safely and comfortably down the line. I'm neurotic and OCD with shit like this!

What is the reasoning behind it? It's shaking too often? Too violently? I took it from 3 to 2 and the PSI dropped to about 13.5 or so so I moved it back to 3.

I know the weight is the more accurate thing, but shouldn't it show 15 for me with it shaking violently (which it was earlier)?

The gauge can be slightly off due to a number of variables.
If it's jiggling it's at 15psi.

Correct me if I'm wrong but you only need one trivet on the bottom and forget the aluminum spacers.  The second trivet I think is if you have tiny jars and you going to make a second layer on more tiny jars on top of those.  3-4" of water is really a lot of water.  I us propane and I can adjust the gas with a valve, so there is no number system like 1-10.  I try to dial it in so that the rocker just barely sputters ever 30 seconds or so.  If I do that 1" of water is overkill for a 2 hour run.  If you have too much heat the rocker is going to continuously rock and make a lot of noise then yea you might need 3-4 inches.  If it's really dialed in I'm only using 1/4" of water so the extra 3/4" inches is just a buffer so I don't go dry.  I just put the trivet on the bottom, jars on the trivet.  Bottom of the jar sits in water a little, it won't hurt them or the grains.

Well one trivet at the bottom will keep them off the floor of the PC, but I thought you wanted the jars as far away from the water as possible to prevent splashback. The jars would be in the water at 1" of water with that little trivet only.

I always thought 1" was sufficient water, but azur says much more than 3-4" which to me seemed like more than I'd read.

I'm doing 8oz jars for PF Tek so I don't want water near the bottoms since it's only a small distance to the foil/inoculation points.

My canner never runs dry with this method: I put the rack in, and then fill it up until the rack is just barely beneath the surface of the water.
