I have Oak and a wood chipper, Indoor and Outdoor... suggestions?

I think I'm going to fruit reishi in tubs; I've already got the culture and tubs. 

I just moved onto these 30 acres that has a milling machine that milled doug fir that was cut down 8 months ago.  It hasn't been aged a year yet so I don't think I'll use it, but its got some fine sawdust in there...

I can also use a wood chipper here, and there are oak trees and piles of cut oak for firewood.  The oak looks like it's been cut within a year.  Would this wood be good to use?

I don't know what size wood chips will come out of this chipper, but i'd like to grow reishi and shiitake and maybe king stropharia or others.  Will i need to make sawdust too?  how much would that help (is that species dependent?)

I'd also like to do outdoor projects, but I don't know what would be appropriate for an oregon Doug fir hilltop this time of year.  I'm thinking I should try making dowel-spawn and innoculating some stumps or downed logs.  How wet does a log have to be for that to work?

What can you tell me about using fresh oak?  as long as it's not being digested by other fungus, it's good to use, right?  would a freshly-downed oak tree be best?  or is it good for it to age a bit?  What about using oak branches that get thin?  is the bark or the moss on the bark bad to include too much of?
