Well, surface area plays a major role in overall yeild. When you break apart you cakes, your increasing the surface area of mycelium(spawn) meaning more places for fruits to pop up. Unlike a cake that can only pin on the outter surface. Casings also provide more moisture for fruit developement, thus yeilding bigger and more fruit.

more moisture=larger yield in #s and weight
micro climate more stimulative to pins=more pins
Unsterlized casing=beneficial microorganisms
beneficial microorganisms=more pins
more pins=more fruit
more fruit=more yield

also, most of the time people are casing substrates with much more nutrition than the mostly verm formulas that get fruited as cakes. In that case
more nutrients=more yield
also, most people break up whatever substrate they are casing just prior to casing. This is like a mini catastrophe in nature, like disturbed earth. For some reason many mushrooms including cubes like this semi stress and produce more. So in this case,
simulated catastrophe=more yield
Also most people get many flushes out of casings. In this case,
Multiple flushes=much more yield
