Agaricus bernardii

First mushrooms of the season around here, things should really get rolling soon. Forgive the crappy cell-phone pics. It was all I had on me at the moment.
Agaricus bernardii



I'm tempted to try these again, but I did not enjoy their flavor last time. I put some on pizza and it ended up tasting like anchovies!? 
Anyone else try these before and like them? They are listed in some guides as choice edibles. I find them to be awfully briny. I'd be curious to hear other opinions, taste and flavor is such a subjective thing.

The first mushrooms i found this season were Agaricus campestris, in fairly large numbers!

Agreed, Agaricus campestris are excellent. It's a shame I don't feel the same about these bernardii - this field is loaded with them.

I've had A. bernardii once and found them okay but with a distracting "off" flavor. Not quite fishy, but weird. Might be good in combination with some other strong flavor (mushroom burgundy maybe?), but I'm not going to fry them by themselves again.

For sure! I love the in-rolled cap margin too. It can be very pronounced!

That's a good idea. Or perhaps in a garlicky red pasta sauce!
We put them raw on a take-and-bake pizza and the juices saturated it with strong briny flavor. I think perhaps fried in a pan they might not be so strong.

So I grabbed a few today to bring home. Took some better pictures as well. I figured I would give them one more try pan-fried.





They tasted better fried up with some fresh garlic and salt. But given the abundance of other delicious mushrooms in the area I don't think I will pick them often. That is, unless they are all I can find - like right now. Some mushroom is better than no mushroom when you've been jonesing all summer.

Thats exactly right!! Its gotta be better than nothing!
They look like Torqs! And they are so nice and clean and stout. Seems hard to believe they are not good!! I am on a bit of an edible Agaricus trip this year, found A augustus , A campestris and A arvensis and am dieing to get a new one on the list! I have been drying the boat loads of campestris I have been finding so they dont go to waste I have almost a QP of them now. They seem a dime a dozen now but boy will everyone be stoked when I pull them out in a few months when there is no fungi!!

Nice finds Lhun! Ill be keeping up with your threads this winter. Youll have to get up to "the spots" I told you about and see if you can find some of the matsi patches I found up their last year. I just might come back to go out to those spots and I will definitely let you know if I do so we can go on a hunt together if your down!

It's a shame we never got a hunt together last year before the rain stopped so abruptly... For sure let me know if you come down this way!
I looked on a map at the area you told me about. Once the rains begin I intend to poke around up there a bit.

Found the first chantrelles in our area as well. Well, sonoma area... Actually my first ever chantrelle I've found outside of the grocery store. But sooo exciting after finding absolutely no chantrelles last year. Definitely a good sign!
I heard matsutake are somewhat prolific around here. Still learning!
