Pasteurizing in a stockpot with an oven bag- viable method?

Essentially using RR's video on horse manure as reference.
I am pasteurizing a brick of coir, 2 qts of verm and 1/2 cup of gypsum in an oven bag instead of using jars, like the video shows.
I didn't feel the need to waste time loading all the jars when an oven bag should do the trick.
Basically, I broke up the coir brick into small chunks, added my gypsum and verm, mixed well, then added 1 gallon of water to bring it to field capacity. I let it soak up the water for 20-30 minutes, then mixed it up again and broke up any clumps.
I poured all this into a turkey sized oven bag, loosely zip-tied the top of the bag for steam vent, placed it in my stockpot, and filled the pot 3/4 of the way up the bag with water. I put a temp probe in through the top of the bag and put the lid on the pot loosely.
I turned the heat on high and down to med-high when it began boiling. I let it go until the center of the sub hit 140, then turned off the heat and let it sit for 60 minutes.
After that, I removed the bag and tightened the zip tie and let it cool overnight.

Is this how to do it with an oven bag for 10+ quarts of sub?

I chose those steps as the best decision based on my research on the forums, now i'm asking if I took the right course of action. I am currently pasteurizing one brick as stated and I'm curious to see the result.
You should get out of the habit of criticizing instead of actually answering the question.

I would like your opinion on the method if you have one.  It seems reasonable, considering the myriad of trusted cults (agar, shroomy 1) that use oven bags for this purpose. I just want to know if there's an ideal way that i haven't thought of.
