Storing Jars After Sterilization

What is the recommended temperature to store jars before innoculation? I was thinking of storing them in the fridge. I am thinking it doesn't matter too much but I thought I would ask anyways. Thanks.

Before inoculation?
You mean after sterilization and before inoculation? Best would be if you inoculate them immediately when they have cooled down.

how much time do you plan on waiting till inoculation? The goal is to make the incubation period as short as posable so to reduce contamintion risk. what are you waiting for?

me, becouse a sertain company sent me non viable spores so i had to order more syringes while 12 sterilized jars sat around for a week or 2.

Well you see the thing is, time is not on my side. We have only one little pressure cooker which holds only three jars. And we are sterilizing 24 jars. This equal 8 hours, not to mention the time to allow the jars to cool. I don't have all day to do this, so it's either get another pressure cooker to cut the time down to 4 hours OR do the 8 hours and store the jars until I have another free day. Anyways, I'm thinking the temp doesn't matter too much but the fridge seems like a good idea. What do you think Anno?

ALSO, is it ok to manually let the steam out of the PC through the blowhole on top? I did this before and the jars didn't crack or anything. Letting the pressure decrease on its own would take FOREVER. Any info on this question is appreciated, as always. Thanks!

there are several reasons a grower might want to wait to innoculate. for instance, a person with a large scale pf tek operation might want to pressure cook hundreds of half pint jars in advance,so there are always some on hand. also, if for SOME reason, they were not sterile after sterilization, you would know this before innoculating them. i've had it happen once or twice with my rye, pressure cooked it again, and it was fine, saved me a few lbs of rye.

what kind of jars? sterilized jars should be fine left on the shelf for a couple months as long as they don't dry out (especially important with breathable whole grain jars).
