I havent tried using wbs in cakes but i have tried using rye berry cakes and the problem with that is, is that they dry out really fast and I was never able to get the rye cakes to fruit. Im assuming the same problems would occur using wbs cakes. I'd recommend that you just cased the wbs. You'd get much larger yeilds doing that then just trying to fruit them as cakes.

my friend plans on casing each cake individually in 2 liter bottles cut in half, so if one contams, it wont grow to destroy the whole thing, just one

Tyvek is found at your local post office, some envelopes are made of it...if they are, it'll say right on the envelope "Made of Tyvek" Put a piece of tyvek over your open jar, put the first lid on (the one with the rubber on it) and then screw on the lid ring. it's safe to put in the PC
