Minimum soak time for rye? (13 hours?)
    #17031612 -

I use RR's grain tek with a bit of a shorter boil cause I like to have my grains a touch drier, allows me to use 2-3 cc of GLC per quart if I want to speed things up

What would my min soak time on the rye need to be to germ endospores? I usually soak ~18 hours but its 930 pm here and I cant have a pc running till 1 am tomorrow lol.

Could I soak from 10pm tonight to 1-2pm tomorrow and be alright? That only gives me a little over 12 hours but thats the latest I can start my pc's lol

thanks

12 hours is good.

The endospore germination thing is outdated as far as I know. You soak to hydrate and sterilize to give you a windows of opportuinity of a couple of days to inoculate.

I've tried no soak teks that people swear by ( I think fooman doesn't his wbs) and both times it turned into such a mess i had to delay my fruiting for a month having to start over from clean spore.

When I usually do my soak I use slightly warm water (my faucet makes steam at full hot, I use 3/4 strength hot water). Since there is usually a little cold water left from rinsing then end temp ends up just warm enough to make the gypsum water soluble. I then soak for 18 hours, giving the endospor's a wide range of temps to germ at. I then boil for 5-6 mins and steam dry/drain in the tub until every kernel is dry enough to touch without sticking

If soaking for endo's is outdated and is only for hydration, then I should be able to just fill my bucket up with steamy gyspum water, soak the grains in that 18+ hours, then rinse and jar and PC?

I suggest that you rince before you soak in gypsum water, because if you rince after you will probably end up removing all gypsum particles.

I rince in cold/warm water, soak 12-24 in warm/hot gypsum water, bring to a boil then shake and load. Works perfect everytimes.

The longer you soak it the more bad shit can grow.

8 hours is best.

12-24 hour soaks the endospores start to germinate and multiply which is counterproductive to the point of the soak.

I personally soak for about 12 but that is with the coldest water possible.

Don't get hung up on the endospore problem.  Soak in hot water at least 4 hours, which will hydrate/soften the grains enough that they won't burst when you boil.  If the grains are hydrated, so are the bacterial endospores which will then be nuked in the pressure cooker.  As foo said, long soaks can be counterproductive because many endospores will germinate and then make more endospores right in the soak water.  You could easily end up with more than you started with.  Consider 24 hours maximum.

Huh, I always thought 24 was the min. I usually pc for 2 hours and i've still been getting mad bacterials ever since i upped my soak from over night to 18+ hours

RR, if i understood what you said correctly, Then in theory I could wash and soak 20 jars worth of rye (two presto's with 10 each) at 8am, soak in hot water until noon, strain, rinse, and boil(gypsum added to boil water), then start another 4 hour soak while the first grains are steam drying/pc'ing?

This would allow m to pc 40 jars a day lol.

On a side note your videos call for a 10 min boil, but my grains usually turn out too wet.

Should I start the 10 min count when I see steam, or start it once the water is at a simmer/boil (takes about 45 min on my super gas burner to get that much watr boiling lol).

Right now I start the 10 minute count once the water is at a full boil. This made my grains way too wet (possibly because of over soaking?) so i adjusted to 7 min of boil, which leaves the rye still a touch too wet to put the full 2cc of glc that is my goal, so I usually end up using 1cc.

Any more tips on soak and boil time?

When you say soak in hot water for 4 hours, how hot? should I see steam or cooler than that?

I always test if my grains are dry enough by grabbing a handful and letting them dry till only 10% remain stuck to my hand.
Are there any tests to see how hydrated my grains are during the boil? I'm aiming for slightly drier since i want to use 2cc of glc each jar

thanks in advance

I would keep it simple, don't overthink the problem.

You grains are still too wet? Reduce the soak time and/or your boil time.

And don't rince after you soak,

Rince, soak in hot tap water (hot water from the faucet) with powder gypsum, bring to a boil for 30 seconds or more if you want, dump the water, shake, load jars, pressure cook.

I did not realize there was a time limit! If the grains have been properly sterilized nothing should happen it you shelve the bag/jar for weeks?

Could one fast forward the soaking process by increasing simmer-time? For example: 4 hour soak, 30min simmer vs 12 hour soak, 10min simmer.
