i've never noticed a cake not being colonized on the inside if it was 100% on the outside, but it's generally a good idea to give it a few more days after 100% colonization to make sure it reaches the whole inside.

Agent, I think you answered your own question.Yes let it be 100%colonization before casing. and as Link said wait a couple-few extra days if you think it has uncolonized spots on the inside, although this is unusual to have that situation.
