Pulled Pork Udon & Catfish Noodle Soup (+What to Do with Quail?)
    #15099375 -

Been trying to impress my new date with my cooking skills.

So far I've prepared fresh crab claws and steamed Manila clams in garlic butter white wine lemon sauce.

Pork chops with red chili-based pork rub, soy sauce, garlic, ginger, chili peppers and tikka masala marinade.

Cous cous in a green curry and chili verde concoction.

Romaine salad with crumbled goat cheese, sunflower seeds, diced avocado, with white wine vinaigrette.

I ordered a whole catfish from the market today. Snipped off the head, fins, and tail to make soup stock with it. Made the stock by adding sweet corn, onion, jalapeno, basil, chili peppers, bacon, chili powder, parsley, salt, pepper, celery, and ginger.

And I would just like to add--WOW, catfish is really really great in broth. This is probably the 2nd best soup I have ever made, right after pulled pork udon. I took out a chunk of bone to taste, and the flesh just melted in my mouth like cotton candy. Fatty... succulent... cotton candy.... *drool* :yesnod: Might have to cut up the fillets I have and add them to the soup to tender them up like this. Once the soup is ready I will add poached egg and penne in the final stage to make catfish egg noodle soup.

BRAIN FLASHBACK ATTACK!!!!  :onfire: It has just suddenly dawned on me that I never posted my pulled pork udon recipe. WHAT THE HELL?!!!!? Okay, here goes. You will need ready-made pulled pork for this recipe--whether you choose to use store-bought or make it yourself is up to you.

Brew the broth with garlic, kim chi, pulled pork, sweet corn, cayenne peppers, black peppers, sesame seeds, tsuyu (soy sauce+fish broth), ginger, jalapeno, small bit of honey. At the very end, top it with chopped cabbage, boiled eggs, green onions, and whatever other condiments you would like.

Honestly, the pulled pork is what MADE the broth. Something about all the salts and flavors that are concentrated within the pork, just makes the soup flavor come together in entirety. This is why I always prefer to use cured hams when making the soup for udon.

My final endeavor: Currently I have 6 quails sitting in my fridge. I am looking to try something besides frying, or doing my usual soy-sauce based marinade. Any suggestions? I was thinking of trying something with a little bit of spice, except I am unsure of which spice to lean towards.

Coming up next........... Monkfish head hot pot!!! In other words, the ugliest fish in existence will soon be inside of me. (insert witty seamen joke here :hehehe: )

Kinda takes the low fat aspect right outta the udon!:crankey:

Looks delicious though.

Most guys ( and I am one) are thankful for someone who CAN cook and arent really all that choosy about WHAT you cook...as long as there is some meat, tofu isn't in it and there is beer to consume alongside.

Rest assured, I would be impressed, Crystal  That looks delicious.

I've gotten used to being a better cook than my gf (both current and my ex); that's ok though - I still enjoy(ed) what they cook(ed), even if I'd have done things differently. It's as greysRDbest said: if she can cook something that is edible and nourishing, then it's ok. If it's really good as well, then that's even better, but not a necessity. I disagree with the meat/tofu thing though

Aww that's too bad.

I like my guys booze free, and confident enough with their masculinity to not be afraid of consuming (and enjoying) delicacies such as tofu.

No seriously though, I think the main problem with tofu is that it is served as a "meat substitute," instead of as the real thing. Which tends to fail because, well, it isn't anything remotely similar to real meat.

RDBest, you should try sun dubu--spicy Korean tofu soup, with some kind of beef, chicken, seafood, or pork. When you order it in restaurants it comes out in a clay pot still boiling.

That looks delicious as well...minus the raw egg, I'm not a huge fan of those. But it can easily be left out.

You crack open the egg and put it in the clay pot while it's still boiling. You let it sit for a few minutes, and the egg will turn into a soft poached egg.

Mmm... love the sun dubu, readily available in Los Angeles' Korea town district.  Your pulled pork udon & catfish noodle soup looks pretty righteous as well.  I'll be making up a fresh batch of kimchi today (and pulled pork is uber easy with a crock pot and a bottle of root beer)... might just have to go find a catfish!

PS.  Tofu rocks, especially silken tofu of the mapo prepared variety (which typically includes some ground pork for greysRDb ).  Firm fried is damn good too!

:rofldrunk:

I think what outrages me most about tofu is that it is nothing... it is just creamy and neutral.

also people...I live in catholicville in the middle of the midwest. largest ethnic population...Polish.

the next person that tells me to grab a good bowl of pho or go to a korean restaurant is going to suffer for it! :grrr:

why you think I'm always cooking?

You know the soup is good when you leave it overnight in the fridge, and the next day it's turned into a gelatinous blob.
