you should  bome and stuff those quail and wrap them in bacon and grill like filet mignon. :yesnod:

you could make rillettes or stew with them and make bomba parma too.

grease salad bowl with butter...coat with breadcrumns...back in cooked rice...put your thick stew or rillettes in a pocket...top with rice and buttered breadcrumbs, bake...invert on platter...cut and eat. basically like quail pot pie with a rice/breadcrumb crust.

my suggestion would have been hot smoking, 350-400F, the bacon fat would make the skin extra crispy

What to Do with Quail?

Suggest not purchasing dead ones...it only stimulates even more cruelty.

I like to take a hike and watch them flying! Then come home to a nice Redi-burger sandwich....or vege lasagna with red wine.

Why is that piece of human meat partly wrapped in a bit of textile? Back when I used to buy meat, it was never wrapped in cloth. Innovation, I guess...

Human meat should always be improve, spur of the moment. It goes well with mustard, I like the fat young ones; not too chewy, and lots of taste

Never tranquilize first, dont want drugs in your meat(well depending on the kind of drug)

Deep fried is good; marinated in lemon, injected with cheddar and parmesian, force fed to death with salad, lathered in extra virgin olive oil, and flash fried is better

All depends on how you go about it

holy fuck, not only did this thread give me a boner but I'm incredibly hungry now, its funny tho cause I was just eating udons a second ago, and now I want mORMEOR.


crystal how much kimchi to how much broth? do you finish the broth with it? I may have to do this when I get some leftover pulled pork which may be soon, need to abuse the smoker some more before the summer is gone.

Went I was a kid we always wrapped quail breasts in bacon and baked in half an acorn squash with whatever herbs you like.

You don't want to add too much, otherwise you'd be eating kim chi stew. Kim chi is a very powerful taste, so I suggest only adding a couple spoonfuls.

I got pictures of my catfish stew, pork chops, and quail I ended up preparing by the way.

You can see that I used bits of the head and the bone for soup stock:



Pork chops with my signature KBBQ marinade (this recipe is a secret of my family, but I will post it one of these days):



Quail grilled in a crusty tangy smokey BBQ sauce, with salad topped with crumbled goat cheese, sunflower seeds, cilantro, and red curry sauce.

Also I agree with Prisoner #1, quail would have been delicious with a crispy layer on the outside. I wish I had read this thread before I cooked these.

Don't worry :evil: I'm mostly a pescatarian too. I eat red meat maybe once a month. I have more of an aversion to carbs than I do meats though (since I'm hypoglycemic).

Looking at the quails, I just realized I could have stuffed them with crumbled goat or Feta cheese. That would have been bomb.

Btw, I must confess I occasionally eat red meat too. But far less than once a month. I still love it though, as well as watching cooking shows in which delicious stews and other slow-cooking meat-based dishes are made...damn! My current gf has digital tv (I'm a bit behind on the media front :laugh:) and where she lives there's a dedicated cooking channel with local (Belgian) chefs. It's awesome to watch on a Saturday night when the kids are in bed, we're both mildly drunk and almost completely passed out.

tuck your legs and wing on the quail, they will cook more evenly and hold help it stay moist.
