You really should steralize them as quickly as possible, but I think you will be ok. I would put the jars in the fridge to slow any contamination that may occur.

I wouldn't worry about it too much. I'd say a week or two at most. More than this and your jars may get too dry :smile:

A week or two?!?!?! are you crazy? They will be ripe with contamination in that amount of time.

So? He's going to sterilize them. Any toxins that are produced from contams will be destroyed when they are PC'd. I do agree, however, that the sooner, the better :smile:

Great timing I just made some jars (popcorn) and plan on waiting till tomorow to pc.
I did some like that last week and they are colonizing just fine so far.

How do you know that?
As an example, there are several antibiotics produced by molds which are NOT destroyed when pressure cooked.

How can you know if the toxins produced by a fungus or bacteria unknown to you are destroyed or not?
You can?t.

You can?t.


That's what they taught me in Boy Scouts, man. Pressure cooking lake and pond water destroys the enzymes produced by micro organisms that make you sick, or kill you.

I mean, there might be some species of archeabacteria that produce enzymes able to withstand temps in excess of 250 F, but you aren't likely to run into any of those unless you are near a volcanic vent in the deep ocean.

Again: many substances produced by microorganisms we encounter in our everyday?s lives are NOT destroyed by pressure cooking.

As Anno said (I think) the PC will kill all living organisims if done properly. However, if those living organisms, while waiting 36 hours to sterilize the jars, have produced harmful toxins, those toxins will remain. All sterilization does is kill biological entities, it doesn't make something "safe for consumption". Using the boy scount example...

If the lake you took your wtaer from had phenomenally high levels of mercury or lead, you'd just have really sterile water with alot of lead / mercury in it.

If the stream you took your water from had a dead pig 50 yards upstream with e.coli spewing from it's ruptured guts, and ya got that into your water that yo uboiled, you'd kill the living e.coli but it's toxic waste would still be there.

None of this really relates to mushroom growign so I don't know why I even typed it :P I personally have a friend help with the PC'ing, my jars never go more than 2 hours from being made to being sterilized, then they are innoculated at the earliest possible time. Hope this helps
