There's two strands of 6500K LED ropes running over each shelf, totaling 300 feet of rope.  In addition, there's six LED par 30 spotlights shining down from the center isle, coupled with four 32 watt CFL 6500K lamps.

The picture above only shows about 25% of the growing area.  We're still filling it up, but getting close to the maximum that two people can handle without hiring employees.  I need to expand my colonization room, since shiitake needs 2 1/2 to 3 months in the filter patch bags before exposing to fruiting conditions, for best results.  'Birthing' too early results in mediocre harvests, not what you see above.  The mycelium needs that long to consolidate its hold on the substrate.

That is a fine looking grow :thumbup:

I'm no grow pro, but it seems to me with oysters light does make bigger fruit.
I've never tried specialty lighting, just day light but one can tell the difference between oyster blocks that get more light and ones that don't.

If I were one of your neighbors, there wouldn't be surplus mushrooms :smile:

I kind of copied your setup from the pictures on your website. I ran 18' of 6500k rope lights under the shelf's on my martha.

Have you thought about selling your shiitake bags nationwide? It would offer the chance to expand your business without too much extra work or building anything new. :shrug:

I would buy one.

Yes, but at this time I don't have enough to part with.  My colonization room holds exactly twice as many bags as the fruiting room, but they need to be in colonization twice as long.  This leaves me no extras.

Hey RR, with the huge amounts of substrate you pasteurize daily, how are you draining it to field capacity after pasteurization?

I think he mixes it in a cement mixer. I also think he adds water to it to bring it just to field capacity, no more.

Yes, but during pasteurization it gets over saturated. It becomes too wet, doesn't it?

That would take forever. :shrug:

I've been doing it the pillow case way and it takes forever to drain so I've been hand squeezing. I wanted to go something better than the in-jar pasteurizing which the substrate is at field capacity before loading the jars. Although you can only do so much at a time with the jar method, I'm beginning to think is way easier than using a pillow case.

I never did the pillow case, I just use oven/spawn bags. Field capacity first, then tie and weight down the bags. Maybe he lets it drain over night since he does it every day?

He has explains his process many times and he does not pasteurize he sterilize it

I don't pasteurize, I sterilize, and I get it to the correct moisture content before loading into bags for sterilization.  It's also far less than 'field capacity' which is used for compost or manure substrates.  With sawdust, or a mixture of sawdust and shredded straw, you want absolutely no water to squeeze out of your hand when you squeeze as hard as you can. 

If it's a bit too wet, simply add more dry sawdust.  If it's too dry, add water.

I've been having an issue lately with my straw mix. My suspicions were it's been overly wet after pasteurization.

When you were growing Oysters or Cubensis off straw, how were you draining it after pasteurization?

Here's a new strain of shiitake I've been working with.  It fruits on softwood sawdust and likes to be frozen solid for a few weeks before fruiting.  There's a thread on this strain in gourmet forum.

Hey RR, in another thread, people were discussing attempts to clone grocery-store mushrooms, and the reasons why it probably won't work well (as you've written about - senescense etc.)

Was wondering, with a smaller operation like yours, whether your commercially-sold mushrooms would be easily clonable to a usable culture?  People talked about the large operations deliberately aging their cell lines to prevent that sort of thing.  Is that something you do?  Deliberate or not?  Just a natural consequence of lots of g2g or?
