Pick them when the veil is just about to rip. Grasp them gently, but firmly, and pull and twist(and one and two and...).

I they are growing in a clump you may want to wait until the majority of the clump is ready for harvest. I mean don't rip out one mushroom that is connected to a bunch of maturing mushrooms. You can use such a mushroom to make a spore print of as well. This will give the smaller mushrooms that are growing around it more time to mature.
