Harvest question

I have several shrooms ready to harvest, just a couple from each cake. How do I harvest them without harming the clusters of pins? Do I slice it away from the cake with a knife? Do I slice into the cake, or into the surrounding pins? Or do I pinch it off the cake? Please help! I am trying to learn all I can, so I can make you all proud!

cut as close to the base as possible with a sterile x-acto knife or utility blade.

I'd use a knife if the mature shroom is surrounded by pins. A single shroom can be picked with a twist and a pull.
