casing - picking shrooms

Picking shrooms off cakes is as easy as just twisting the base of the stem.

AF is assuming that in a casing some of the stem will be slightly under the top vermiculite layer. Can you grab the base of the stem below this to pick the shrooms. AF was worried about leaving a bit of stem buried and that it might rot.

I wouldn't worry about a small piece left on the cake. Your cake has a limited life span anyways, that little piece isn't going to make much difference.
