Great Big Jar

This is what my neighbors call girl told me:

I found a great big glass jar. It is a gallon and a half.
I had some birdseed soaking for almost two days and decided Id better do something with it. So I filled the jar up to about 2 inches from the top, screwed the lid that I had poked holes in, taped over and foil on the top. I pooped it into the PC, along with some pint jars thhat I had prepared a couple of days ago (WBS) that had sprouted! There are little shoots growing in the jars!
So these as well as my great big jar got PC'd at 15 pounds for a little over an hour.

Does anyone think that all of the grain in the big jar will be properly sterilized?
It spent a solid hour at least at 15 pounds, with 30 minutes getting up to 15 pounds, and who knows how long cooling down. Being that the WBS had been soaked for a day and a half, with very hot tap water occassionally being run into the container to rinse the grain, then drained a bit too well in a colander, then soaked again in very hot tap water, rinsed and drained again....I would think that any endospores would be hatched by then. At one point a tiny amount of bleach was put into the water the WBS was soaking in.

And about the jars with the sprouted WBS in them.....Will these be ok after PCing?

A word to the wise: DONT prepare WBS jars and then wait a few days before PCing them!

i dont think so. even if you pced it for 2 hours it may not have reached 121C in the very middle for an adequate amount of time

For 2 hours it would....generaly with a 1 galon jar PCing it for 1-1/2 is sufficient...

It probably DID get all sterilized in the middle....except that the damned jar BROKE! :frown:

I think that since the jar was so big, that the heating and cooling was un-even, so it cracked the glass....all most a perfect circle around the bottom of the jar.

Not to say it would never work, but it didnt work this time, and come to think of it, a jar THAT big would probably be suseptable to contams because of how long it wold take to colonize the whole thing.

Oh well :crazy:
