Mazapatec jar... properly colonized or not? (PIC)

It's my first time Mazapatec and the mycelium in my jar is not snow white (not pun intended!). However, it's 99% colonized. It is a bit special jar, as it contains a handfull of cow poo as well. The poo sticks to the glass (upper right and a bit everywhere) and is not totally colonized. It's the 13th day since inoculation. When should I case it? How much time to wait yet? Is it possible to let it colonise a week more without having it completely digested by the mycelium? Or can/should I case it as soon as possible? Does it make a difference? Sorry... newbie questions, but.... I AM a newbie.

If it is fully colonised, shake it up, to loosen the grain,then leave it for a day for the myc. to recover then case.
