in the middle of 2nd grow attempt, first attempt worked out very well, 12 jars, none contaminated, made 2 casings and did 8 right off the cakes after dunking and everything worked out great. that time i just boiled the jars for an hour to sterilize. this time around i got my hands on a cheap pressure cooker, and i PC'ed them for 30 minutes and ive already had 6 contaminate and the other 6 have slowed down considerably. the spores used were from the same vendor and i was equally careful during innoculation so im guessing the sterilization is to blame. does anyone wanna give me a idiot proof method to doing this? whats a good length of time to leave them in? once done can i just releive the pressure or do i have to let it sit in the cooker until cool? anything else i should know next time? thanks

Also (I haven't done it yet but I've read a lot) you should probably PC for an hour at the very least. Any less than that leaves a lot of room for contams.

Is it possible to PC for TOO LONG? Ive got some jars I PC'd for almost two hours...and at some point, most of the water in the PC boiled out. I had the jars sitting on some towles on the bottom of the PC...the towels burnt up, but didnt have enough oxegen to really burn. Those jars are taking FOREVER to colonize! But some DO show a little sign of germination.
Could I have PC'd all the water out of the jars? Could smoke from the burning towels have been drawn into the jars, along with whatever pollutants as the jars cooled inside the PC?
Could I have simply over-cooked the jars/substrate to the point that there is nothing of nutritional value in them?

I never PC less than 60 minutes and have never had contam problems, except for a contamed syringe which was beyond my control. Anyway, I'd PC for an hour at least, and let the jars cool completely under pressure in the PC (overnight is best,IMO). Don't vent the pressure in the PC until just before opening it. I'm not sure if this is universal, but there is always a pound or two of pressure left in my PC after cooling overnight. Venting too early will cause ambient air to be drawn into the PC as it cools. It is possible to PC too long, particularly in the case of rye or similar grains. If PC'd for too long, they tend to caramelize and become basically useless for mushroom cultivation, as well as a hotbed for contamination due to the excess sugars.
