I have heard many warnings about condensation in jars, but i always have that and have had no problems. If you are only steaming then you may have a higher chance of contamination, but I sterilize mine in a pressure cooker and all is ok. If you notice ANY discoloration, birth and set away from other cakes or discard. It is not worth ruining all your cakes to save only one. Hope that helps.

Condensation is a good sign that your cakes have adequate water in them. This is a good sign. Most all of the jars that I've done have this condensation your seeing on the inside of the jar. The mycelium will be fine. Just don't let them sit around for too long. I've personally let fully colonized cakes sit for almost a month before I birthed them. But, I was growing ecuadorians. And ecuadorians I here don't really have any problems with pinning inside of the jars.

well, now i got worse problems..that specific jar has a grey-greenish contamination in it now...any ideas on that?
