The use of the "other" mason jar lid.

On the pf web site I notice that he uses the plastic mason jar lids in all the pictures of his fruiting cakes.Are the plastic lids better for fruiting because they hold more water or something.Are holes neccesary in these lids?If pf uses them then they must have an advantage of the normal lids however there is no mention anywhere about the plastic mason jar lids.These lids are made by the same people who make the jars & can be found almost anywhere the jars are sold.

No.

This seems far from advanced. How do the lids hold up under PCing? The ones saw at the store sayed "not for prossesing". Perhaps it is because they will not hold a reliable vacuum seal?

my guess is that the problem is the lids don't like to come off if you screw them on tight and PC them, that is the "vacuum seal" is TOO reliable. but folks here PC them all the time with the lids loose or with holes/filters.

Right on! I was just thinking that it would be a bitch to break the seal on, since you cannot pry on the edge of the lid. Of course in the application of substrait prep the holes remove this probelm.

If holes are made in the lids there will be no vacume seal...Unless you put tape directly over the holes w/o filter material...But even then I don't think the tape could stand 15psi, and just blow holes in the tape to release pressure anyways.
Not rusting is a big advantage though...
