Let me ask you this... if you cook a carrot, and some of the caotene becomes more "bio-available", how many other nutrients do you destroy, simply to get more carotene.

many of these nutrients need the cooking process in order to become
bio-available by breaking down cell walls. cooking carrots and tomatoes
for instance increases the absorption of some of the antioxidants they
contain, many foods contain antinutrient  factors  that are destroyed
by cooking, the denaturing of proteins make them more vulnerable to
digestive enzymes
