Outdoor semi casing grows

I've got some questions for any one who has done some outdoor grows:
Background~ I had a few PF w/ rye jars take on some water during the PCing but I shot 'em up anyway w/ cubensis culture and waited for them to colonize to the edge of the water logged area.  These were then cut up and burried in the plots.  South Carolina weather: 65 F - 80 F w/ 70-95% humidity.

I've got a couple plots going.  One is in an old poppy garden made of one giant rubbermade w/ potting soil and holes drilled in the bottom.  I burried the cut cakes and treated like a regular casing w/ about 1'' of potting soil on top.  The second is the same set up but smaller and I'm testing different vermiculite (no nuts) thickness on top.  The third is again the same with some pancake mix springled in the verm.  All are coverd 80-90% w/ plastic wrap. 

So I'm noteing that the shrooms are growing but they're really short and fat (this strain doesn't do this w/ cakes or casings indoors).  Also, the dry weight is only 5% of wet instead of the usual 8-15% I've seen and the myc. seems to be growing into the potting soil 4-6'' down and less into the verm or casing on top. Anyone know why any of this might be or have any random tips for grows like this, it's just for fun but I'm trying to increase the yeilds?

#1 tip, add poo..

outdoors are hard to control, the potting soil has a little bit of stuff in it for the shrooms (bits of plant material) but its not really good,

try making plots with compost material instead

Although i may advise others in a general way regarding all types of mushroom grows, and may even post question from other forums about growing "active" mushrooms, i only grow non-"active" mushrooms and edibles.
