Honeywater death

No biggie, but my friend PCed a quart of honey water last night. It was a quart jar with a polyfill lid. Filled about 3/4 of the way with water, and with a teaspoon of honey in it. He also broke a half pint jar and threw some chunks of glass into the bottom of the jar.

He PCed for 30 minutes, and then released the pressure in the PC, allowed it to cool overnight.

When he woke up, and opened the PC, the bottom of his quart jar had shattered.

What did he do incorrectly that caused the jar to break, so he doesn't do it again? :frown:

Was the jar sitting directly on the bottom of the PC? I've never heard any definitive reason for jars breaking.

it was sitting on the thin aluminum (i think) rack that has holes in it. It wasn't sitting directly on the heating surface.

It's strange because he has PCed glass containers that aren't MEANT to be PCed and they have come out fine. Strange...

He just doesn't want to waste any more precious quart jars.

I just made some honeywater too.  I have a feeling that you or your friend had the lid to tight.  The pressure inside could make the glass crack.  I left my top of my jar  a little bit lose so pressure would not build up.  It worked fine. :wink:

Odds are this isnt what happened - but its a definite possibility. I've heard that you shouldnt clean canning jars with those scrub pads, because they put scratches in the bottom of the jars that cause temperature differentials during heating and cooling. Although you'd think that the glass from the inside of the half pint wouldnt have the hardness to scratch the inside of the quart jar enough to cause this - I'd bet thats where you had your problem.

Maybe be more careful not to swish the glass around pre-pressure cooking?

Ok... lets chalk this up to newbie idiocity.... if anyone is curious what happened, so they DON'T reproduce the same thing....


WHen reading the TEK, it was made clear that you don't want to PC for more than an hour for fear of carmalization.... So, What he did was bring the PC to a boil before putting the jar of cool water into it... :smile:

So, basically... it shattered the minute he put it into the PC.

(which unfortunatly was repeated today. :smile: Lucky for him though... he bought a case of Quart jars. :smile:    )

thanks for your thoughts, and I hope I helped at least one newbie avoid the same mistake.
