First Time Rye User - Need help -

Hello all,

This is my second attempt with rye - Just need you to look at the picture and let me know how you think this is progressing - This is after 6 days of growth -



I have shook them only once - Am I on the right track?

It doesn?t look too bad, but the yellow color might point to a possible bacterial contamination. Do the jars smell?

Couple Questions - What would it smell like? It smells like the grain -
Also - How do you prevent this type of bacteria from happening if it is contams?

Bacterial contamination smells.....nasty.

There must be some reason for the yellow color though. Did you incubate the jars at a high temperature, like 90?F?

The temp has been 80 all along.

Would you get the discoloration if you put too much water in?

Could be.
It?s hard to tell from the picture though if this is the case.
As long the jars don?t smell bed, they should be good to go.

Yes I PC'D them for 90min - Then they were left to cool over night - Then they were innoculated in the morning using the oven Tek -

I have used the PF Tek for years and now want to move on to Rye Grain -

i can usualy avoid bacteria by presoaking. the grain expands slowly by soaking overnight in water, rather than quickly in the pc, so the kernels don't rupture. ruptured kernels seem to be a dinner bell for contams, bacteria for the maost part.
bacterias/yeasts are nasty contams, they semll foul, you can't always see them, and they will take over a whole jar quick. if it smells like [rancid butt], powdered sugar, fermenting beer, or anything else unusual, chuck it.

the first time i boiled my rye, a bunch of little worms were floating in the water.....do you get that too, concrete???

rind a new sourse for your rye.
also i usualy use CO2 to kill off pests in bulk grain i plan to store for prolonged periods of time.

try using a pf cake to innoculate a few rye jars, although sterility would be a concern if you are confident in the oven tek or have some sort of glove box then this could speed colonization up to compete with molds.

I use the oven tek all the time for doing G2G xfers, and have no problem with contams.
I grate pf cakes with a cheese grater, and one pf cake will inoc 4-5 jars of wheat or rye berries easily.

MsPacMan - I believe the worms are due to the grains being stored in less than optimal temps. I just started soaking/simmering my grains - just couldn't get it right by dumping in the jars and pc'ing. Looks like they are doing better - a little too early to tell for sure. Anyways, the first time I simmered, little black bugs floated to the top - I fished them out and called the store. Turns out, that's why the freakin' health food store is always so COLD when I go in there! I was told that all organic grains have "eggs" in them, and keeping the grain cold (they even recommended freezing) will keep the eggs from hatching. If I understood correctly, I think she said that freezing would actually kill the eggs. I posted about this last week some time, and the general consensus was that the extra protein wouldn't hurt...lol!
