Usually 1-1.5 weeks at room temperatures (65F-75F) to see any noticeable growth in the jars, dependent on strain of course. Plain Rye is much faster, although I assume a straight millet might be about as fast as rye. Grain jars that are too wet are quite inviting to bacterial bloom. Too dry and they may stall during colonization. Your better off too dry then too wet though. Birdseed, even when moist enough, looks kind of dry after it has been pc'd, sometimes with little to no condensation on the glass of the jar. This is fine, all the moisture is in the seeds, where it belongs.

You just have to set up an incubator. They are stupid cheap and perfect every time. 3 days is the longest I have heard tell for folks who use them.

I use Pennington's, steep for about 45 minutes, rinse well with cold water and load into jars. PC and innoculate - syringe or colonized grain - usually see the first growth in 3 days. I tried organic millet from the health food store, and it exploded all over the place before the steeping time was over. I'm not sure how long it took, but I just went back to good old Pennington's. Less trouble, less expensive, and it's working for me so far.
