Rye jar moisture question
    #1007520 - 10/30/02 08:42 PM (19 years, 1 month ago)

I'm making my second attempt at whole grain rye colonization (first one failed for known reasons, these problems have been fixed) using quart jars/filter discs and need to know the following:

Does the moisture inside the jars escape through the filter, necessitating the use of a humidified container to store them while they colonize?

Well it depends, if you are using a lid with holes, you should be fine with out humidification. If you are using the filter as a lid (I don't know why anyone would do this) then you will probably need some kinda humidification. But don't do it that way, use the lids and you'll be fine.

By "a lid with holes" do you mean the normal jar lid, with holes punched in it, over the filter disc so that the holes are filtered? Or do you mean no disc, just holes?

I was under the impression that using the disc as a lid is what you would want to do to allow for the necessary (when using whole grains) gas exchange to take place.

No, using the filter as a lid allows far too much exchange.
You need to put a lid over the filter with a 1/2" hole driled in it, this provides the right amount of gas exchange.
