substrate moisture question

Just a quick question on substrate moisture, Last year I grew a few batches of shrooms using a pressure cooker for steralization but this year Im without it. After steralizing on a low boil for an hour as opposed to twenty minutes in the pressure cooker I noticed the day after that the substrate looked extremly dry through the glass so I opened up one one of the jars and checked for moisture. The results varied big time, last years substrate with the pressure cooker had alot more moisture to it as opposed to this years. I thought I must of screwed up and didnt use the right amount of h20 but after rethinking everything I know I used the right amount of water. My question is will the extra time steralizing have that much impact on the moisture content and if so what steps can be takin to correct the problem? Any replies would be appreciated! Steaming the jars won't dry the substrate. Too long in a PC will.
