Why Must Cakes Be Refrigerated During Dunk Tek?

I was just curious why the Dunk Tek (which consists of submerging your PF-style cakes in a container filled with clean water and then putting that container into the refrigerator for 12-24 hours) needs to be done under cold temperatures. I didn't want to change it or anything, I was just curious of the reason why this must be done in a refrigerator.

You don't have to put them in the fridge. Some do and some don't. Some think cold shocking will cause your cakes to fruit faster. I really don't know how/why it would work.

www.mushroomvideos.com ; watch all 4 part of the PF tek. its all up to date and it shows the correct way to do it.

just leave out the "put in fridge" part and you got it right.

Cold shocking is out dated info. It was suggested a few years back, but all it does is slow your cakes down. Cubes are a tropical species - cold shocking is only for cold-weather species like shiitake.

Exactly, RR uses it to get fruits from shiitake a few weeks before you would get them otherwise.

So the refrigeration is for cold-shocking, which as you guys say, is an out-dated method not suitable for tropical mushrooms. So next time I dunk my p. Cubenis cakes, I should leave them at room-temp (68-75), right? Would that be better for the cakes health?

Yes, exactly. You will gain zero from semi cold shocking your cakes in the fridge when you dunk them. All you have to do is dunk them at room temp. and all will be fine. Cubes don't benefit in any way, shape, or form from cold shocking. It's like pissing in the wind.

Bear in mind, Let's Grow Mushrooms doesn't say to dunk in the refrigerator.

However, in the heat of summer if you don't have AC, it's a good idea to dunk in the refrigerator.  It has nothing to do with cold shocking and everything to do with preventing bacteria bloom while the cakes are in a semi-anaerobic environment under water.  Organic matter in warm water begins to ferment after a few hours.  If it's cool in your house, just use cold tap water.  An alternative to the refrigerator in the summer months is to change the dunk water every few hours.  Don't forget to rinse before and after the dunk under the faucet.
