Grain prep question regarding gypsum
    #9744046 -

I have my winter rye soaking and plan to simmer and pc it tomorrow. I have gotten some gypsum but mine appears to me more like little granules than a powder. I added some to the soak water but not sure if that was right. I still have to rinse, simmer, strain and PC, won't the gypsum that I added just get washed away? Should I add a pinch to each jar right before I PC them? How will this work with it being in a granule form?

Sorry for all the questions. I though I had it figured out but now I am just getting myself confused. I got a ton of other life things going on right now so a bit distracted sorry.

the gypsum I found was in little balls also, it worked for me and broke up in the water easily. I add mine to the soak like you did. after the 24 hour soak was up I transferred the same water and rye to a pot and cooked. after boiling for 20 min then you rinse the rye , let the outside dry, and put in jars.

Did you wash/rinse the rye before you started your soak? you need to get all the crap off the rye before you soak it. but you dont have to take my word on it

*It's irrelevant. I bring rye to a raging boil after the 24-hour soak, with the stove on 'high', and have ZERO busted kernels. As shown in the video, rinse grains very well with hot tap water before the soak. Fill the kettle with hot tap water to begin the soak. Add gypsum. After 24 hours, bring to a raging boil for five to ten minutes, then drain and shake. I've never seen more than one kernel in a thousand busted when following the above.

One of the secrets of grain preparation, regardless of which grain, is to rinse the kernels very well before continuing with whatever preparation tek you're going to use. All grains get packaged with a lot of chaff and grain dust that if not rinsed out will cause the grains to stick together later and cause that sticky goo. Put your dry grains in a large kettle and fill with water as you stir it around. You'll see all the dust and other crap come floating up. Slowly dump out the water to get rid of the junk and repeat two more times or until the water pours off clear. Adding gypsum is also a great idea. It will take anyone a few tries to get the moisture content right, regardless of which grain or which tek you follow. If it's too wet this time, make adjustments next time, and so on until you work out your system.

Thanks.

Yeah rinsed before the soak and then I did a second rinse before it went into the kettle for the boil.

There went your gypsum.  I never rinse after the soak.  Bring the nasty soak water to a boil, and then pour it out.  This keeps the bacteria infested water out of your sink drain too.

Ok thats good to learn I'll make sure to do it that way next time. I guess I was lucky the grains still roll easily when I turn the jars.

I've read a post or two referencing the need to rinse after boiling to remove starches from the grains.  Is that true?
