From wiki:
"A number of studies have claimed that the reaction of pain receptors to the hotter ingredients in curries, even Korma, leads to the body's release of endorphins and combined with the complex sensory reaction to the variety of spices and flavours, a natural high is achieved that causes subsequent cravings, often followed by a desire to move on to hotter curries. Some refer to this as addiction, but other researchers contest the use of the word "addiction" in this instance.[11] Additionally, curry addiction is an example of a colloquial use of the word "addiction" as the medical definition of the word requires continued use despite harmful effects.[citation needed] Since medicine has not shown harmful effects of curry consumption, the use of the word "addiction" is debatable."

I don't think I've ever had any kind of curry dish. What's good?

Mussaman is delicious.

And you can't go wrong with a simple red curry chicken, or something of that nature.

For Indian curries, I love lamb vindaloo.  Vindaloo is super-duper hot and delicious.

Madras curry powder...not really a brand, more of a style. its somewhat spicy and usually has whole bay leaves (and sometimes whole dried chilis) in it.

its most def better than most of the bright yellow (heavy tumeric) powders you get at a regular grocery store. you can find it at indian markets (duh!) and sometimes at asian markets.

it works well in both dry dishes (added to rice, as a rub) and saucey dishes (curries, marinades, sauces).

Im making grilled coconut curry chicken today.

3lbs boneless skinless chicken breast
2 tbsp yellow mild curry
1 tbsp red pepper flake
1 can coconut milk
some onion and garlic salt and pepper all go into a bowl to marinate for 24 hours.

Ive had this in the fridge for 48 hours, now its time to grill.    Ill be making a thread about this later.

OOoh and Im using "spice Island" curry powder.

I love a good masala curry too.

Penzey spices make several different curry powders.  Pick one.  With Penzey you know they will be fresh.

Yeah, I've been thinking about adding fennugreek, also coriander to the mix. I'll have to check out curry leaf.

1 teaspoon ground coriander powder
1 teaspoon tumeric powder
1/2 teaspoon cummin powder
1 tbs guala masala
1 clove garlic minced
1/2 teaspoon fresh ginger or 1-2 ground dried ginger
1/2 chilli powder or chop chilli
1 tbs oil

makes a curry

you can experiment with the measurements and fry and smoke them abit or add them straight to a dish
i add it to cooked lentils and tomatoes

you fry the onions and ginger till golden brown then add the other dry spices and keep stirring until it turns crumbly golden brown and smokes slightly and keep stirring so it doesnt burn

remove from heat and either add a little bit of stock or water while its still hot and it steams into a curry paste while you mix gently or just add the hot cooked crumbly mix straight to a dish
