Kombucha Question
    #9029253 -

Will this tea only survive in the fridge or does it do best within a certain temperature range?

Also, if the tea has to be able to breathe, how do you keep it from tasting like the fridge?

Thanks.

once it has fermented to your taste, then you can transfer it to bottles in the fridge. no need to breathe once its done brewing.

Do you have an opinion on the ideal temperature range for fermentation?

Also, must the jar be open for fermentation, or would a couple inches of air in a sealed container be enough for the culture to breath?

Thanks.

room temp is perfect.  and you want to let it breathe, put a towel or paper towel over it with a rubberband to keep out contamination.

There are many people there willing to give out free cultures, as long as you pay for shipping (or if close enough, just pick it up)

I'm not a fan of the FDA, but I've decided to pay the $3 for a source which passed health inspections. Clark's is the nearest place for me. No offense, strangers...

These are usually par-frozen in my part of the country, leaving me in search of viable seeds. These are a delicacy, too. Several layers of brownish skin can be pealed away, and they taste something like chestnuts.

Drops of apple-like juice accumulate under the custard-like fruit when the spiky shell splits, just a little. That's how you know it's ripe. Before you divide the giant, segmented pod, the fragrance is like sweetened granola.

This fruit is supposed to be a warming aphrodisiac, which nourishes sickly animals back to health.

When fully-mature, it tastes like a devastatingly-rich, banana pudding with onion aftertaste. I'm frequently told that it smells like garbage.

Andrew Zimmern spit it out after eating animal penises, but I think they're just playing a game, to keep foreigners away from "the king of fruits." Even the most timid people around me, who still mustered up the courage to try it, said the taste was tolerable.

to each his own. just know that kombucha along with every other fermented food has been fermented/brewed for hundreds to thousands of years without the FDA.  FDA regulated foods = heat treated or preserved foods with less nutrients than you would get normally.

ive been drinking home brewed kombucha for a few years, never once had a problem. and ive never heard of anyone who has.

I ate my first durian last month!  I devoured most of it!  It was SUCH an experience, as I was tripping on LSD at the time.

I can't wait to go to Thailand and try some straight from the tree.

I like it.

You're right. I heard it came from caves, that Mongols carried it on horseback, but I've ruined it, before. Trying to figure out what I did wrong, but I believe the solution was too sweet and not sufficiently acidic. I ask myself what kind of measurements they might have used, if any.

Another way to think about it is how much does it cost to mail in a secure box? I thought those things cost about $3.

BTW, we have unrefined stuff in alot of places, now, but (in case someone wanted to get really authentic) what kind of sugar would they have used, way back then?

My first encounter with durian was also on LSD.  Psychedelics and weird fruit FTW

I heard that wine gets carbonated if you seal it, toward the end of the fermentation. That's why I thought kombucha might be able to breath, if a little bit of air was at the top of the sealed container. Doesn't the kombucha have to be sealed for a while, before it gets that little bit of fizz, like in the bottles you buy at the store? Or, does this happen in the open?

correct, if it is not acidic enough it could contaminate. which is why when you start with a new culture, you start with a small batch, so it does not take long to transform the tea, onoce thats done, then dump all of the liquid and the culture into a new full batch. piece of cake.

you dont need to mail it in a box.  you can mail it in a bubble wrap envelope sealed inside of a couple ziplock bags.

that is correct.  while things are still fermenting, you can bottle and seal them and they will naturally carbonate. kombucha doesnt produce alot of fizz, at least ive never seen alot, when i want carbonation, i just brew for 3-5 days, bottle, cap and wait another 1-2 days at room temp and then refrigerate.
