Bacteria in incubation?? Smelly Stuff
    #887594 - 09/17/02 06:46 AM (21 years, 6 months ago)

Out of my nine pint jars five are smelly. I am wondering if since the jars are (not anymore!) all in the same place will the other get the contamination also? I smelt each jar and seperated the ones that seemed to be fine. I can't understand where the infection came from. I was very clean with everything I did. Could the bacteria have come from the vermiculite or the brown rice flower? For sterilization I put them all in a pot and boiled for an hour. I did diviate from the MMGG by not only covering them with tin foil and a rubberband around but also a zip lock baggie. I figured this would have been the best way to keep the moisture in. Could the contamination have come from the baggies? I never sertilized them.. Thanks for any comments!!! THIS IS MY FIRST POST!!! I love this place by the way.

Contam can come from many places.
Usually if the jars are sterile to begin with, the contam will have come from innoculation. Bad print/syringe, introduction of contam during innoculation etc.
You should follow the tek to the letter. Covering the jars with unsterile baggies is not a good thing! The high concentraions of Co2 is a breeding ground for bacteria.

Good luck

Yeah, I'm in the same place.  I've had my last 5 batches go down on account of bacteria in incubation.  Everytime reputable spore syringes from sellers, every time good innoc' tek (I even Innoc'ed some jars for a friend, and they are doing fine at his house).  So it has to be incubating in my bacteria ridden house (I don't think the baggies are what's giving you trouble, just your air).  What I'm trying now is keeping everything is ziplocks sprayed down with lysol and sealed.  Out of the Pc, into the bags, into the glove box, innoc'ed, back into the bags, resprayed, and zipped up.  I'll post again when I get (or fail to get) germination/growth.

I am willing to bet incubation has nothing to do with your bacteria problem. The two most common sources of bacteria contamination is air and water.

right, but some air (with water in it perhaps?) must seep into the jars. I've gotten the same results too many times and every other variable was changed except for incubation. We'll see. If this batch still doesn't work, maybe I'm wrong

opening them all up might catch you some more contams. keep your nose out of them and see what happens. good luck....

good call. the nose test should only be applied if you've already got a solid reason to suspect your jars, like they don't germinate, or you can't unstall them. it would blow if the other jar started to stink, too.

Next time you sterilize dont put a bag over your jars. Im willing to say that is why you got such a high contamination rate. I assume that when boiling the steam enters your jar and kills a great deal of contamination. Next time follow your tek to a T and do not improvise or add.

Invest in a pressure canner...

Some bacteria in grains such as rice can survive and are even activated by boiling temperatures. Use a pressure cooker, the temperature is much higher and kills everything.

pc'ed pf jars in lysol bags are now showing faint germination at day 5. We'll see if it goes anywhere...

The tek works. no contam, all of the jars have germinated at all points.
