exploding grain question

!!!!THIS MAY BE A STUPID QUESTION!!!!

Anyway, I was wondering if exploded grains have any other disadvantages other than making the grain stick togeather in the jar.

I was looking at some boiled wheat today and couldn't resist eating a bit.
It had quite a few burst kernals in it actually.
It wasn't very good, but still far better than raw wheat.

yeah, i've got a jar thats about 60% colonised at the moment on wheat with a few popped kernals here and there. It's not that much of a bastard to shake, you just got to put a little elbow grease in!

I haven't tried rye yet (because I've got a big-ass sack of wheat), but I'm guessing by your small yellow face that rye is waaaaaaaaay better.

Wheat works just as well as rye. Better for some people just because experience is funny like that. But all in all, they are interchangable. Cooking times for steeping, and inherent moisture content does vary a little as does mass per unit of volume so keep an eye on your formulas, but all in all neither is better. Wheat's cheaper around here though, so that made it better IMO.

Exploded kernels in theory cause areas of depressed air in the substrate leading to conditions favorable to bacteria. Also, an intact grain kernel is pretty dry on the outside, an exploded one is of course a moist blob. Available water and a lack of air cause spots in substrates conducive to bacteria.

Now, with proper sterilization and sterile innoculating techniques this doesn't matter. But, mistakes happen, innoculate gets low levels of bacteria, a single bacteria may make it passed your Hepa etc. A substrate made of swollen but not exploded kernels favors mycelium (esp rhizo myc) over many other organisms, whereas a substrate with many moist blobs of nutritious goo is just as favorable if not more so to bacteria and some molds.

One tip, if you spot a suspicious wet, greasy looking hunk of exploded kernels in a jar that is colonizing, don't shake that jar. There is a good chance that the rhizomorphic mycelium will be able to over power it and colonize. But if you shake it, you spread it through the substrate. In the few hours that it takes the mycelium to recover, the contaminate has already reproduced a few hundred thousand to millions of times and the substrate is likely doomed.

dunno, all the times i have tried working with rye grains, i get some exploded kernels. so i decided to put them in water for one night prior pressure cooking. the result was astonishing, almost no exploded kernels. that didnt help the bacteria problem, btw...

Good timing for this post - answered many of my questions. I've recently started playing with soft pastry wheat berries. I tried a few wheat jars, and just used my first to spawn some 3-in-1 - hoping to begin fruiting conbditions by the weekend. All my wheat jars turned into semi-lumpy gooish looking grains, but very few exploded kernels. I didn't steep, simply loaded jars with grain and straw water. The myc. growing on the wheat jars was/is so much whiter & rhizo than my seed jars. Because my wheat jars end up with at least the bottom 3rd firmly attached to the jar and UNshakeable before they are cool to the touch, they are taking longer to colonize. However, they have all made it to the end (or are well on their way) looking very healthy. I've only made it to the incubation stage with this grain, so I can't compare fruiting, only colonization. I also played with a jar of rye:wheat at 50:50, mixed with past. straw juice. I didn't stir the jar to mix the 2 grains well, just threw it all in the jar. The top half of the jar was a combination of the 2 grains, and completely colonized within 5 days of gtg transfer, via seed. The bottom half ended up with more wheat than rye, and is colonizing very slowly, just like all my wheat jars (to date). Note to self: Mix grains thorougly!

well i now have an oven bag inside another oven bag with straw and rye grains. Its funny, but inside it one can see both rye kernels with bacteria and rye kernels with mycelium.... lol

i didnt sterilize it in pc, but in oven and that must have been the prob...

i am not going to throw it out of the window... patience and lets see what will happen!!!

Kykeon, don't shake that bag. And if you can store it at a slightly lower temperature than optimal it will help too. high 50's to low 70's does a good job of stalling the bacteria while still allowing the mycelium to grow. Or just toss it in a corner and don't fuck with it. Mycelium is powerful, it may overcome.
