Spelt VS. Rye

While in local bulk food section of my favorite food store, I noticed Spelt whole grain. I've read a bit about it, but didn't find anyone that has used it in it's whole form for cubes. I am going to innoc some rye this weekend, so I thought I'd experiment with the spelt. My plan was to soak it for 24 as with the rye, cook, drain, and do the std. quart jar thing. If anyone has any experience with Spelt, let me know, or any good experimental type thoughts before I begin.

Wow, so much interest and input. :smile:  Anyway, PC'd 8 qt jars, out of filter patches, so tyvek cut from envelopes was used.  Wonder what gas transfer will be like with that.  5 jars rye, 3 spelt.  3 jars rye with the tyvek, 2 with one tiny hole in lid for innoculation, covered with tape PF style.  Spelt gets 2 jars with tyvek, 1 with lid.  All innoc with 10cc magic juice.  Will keep you posted on prog.

I use spelt flour in place of brf in all my jars. I bought organic spelt from whole
foods market, and grind it up in my coffee grinder. I grind my own because it will
keep longer in grain form, and i just like the hands on approach. i inoculated five
spelt and five brf jars just to see if it was worth it. The spelt jars seemed to reach
100% one day before four of the bfr jars and one bfr did just as well as spelt in my opion.
Also the spelt cakes seemed to produce a little bit larger fruits, and let
me point out the difference was almost unnoticeable. Could have been all in my
head! I did not weigh the spelt flush vs bfr. So is spelt better then bfr, shrug, you
be the judge.

UPDATE:
Both the spelt and rye are growing good, strong myc. One may be better than the other, but I cannot tell at this stage. The real test will come when fruiting begins, so i'll let everyone know when that time comes.

Spelt is a predessor(sp?) of modern wheat...

Yes, spelt is kind of a predecessor of wheat, it contains among other things more proteins and it should be available in most health food stores.

I've had excellent result with spelt grain. Big shrooms, but I remember the jars contaminated very easily. Thats why I stopped using spelt grain.
